VINIFICATION
The grapes come from a selection of our vineyard parcels. Fermentation takes place at low temperature to gently extract the aromas of this noble grape variety, recognized as one of the best grape varieties for the production of quality sparkling wine. The prise de mousse (or second alcoholic fermentation in the bottle) is started by the addition of the liqueur de tirage. The bottles are then stored in cellars 25 metres deep, where they benefit from a cool, constant temperature. It is here, in the heart of these underground caverns, carved out of tufa, a fine-grained limestone, typically found in the Loire Valley, that this Le Val Brut Chardonnay will really come into its own during 9months ageing sur lattes. The final step will be the revelation of this ultimate Chardonnay Brut, when the complexity and delicacy of the sparkling wine will be unveiled.
TASTING NOTES
This wine from our vineyard develops floral and mineral aromas on the nose, and discreet notes of white fruits. A beautiful freshness on the palate, full of finesse.
